At EUSKALDUNA, they sure know how to cook fish. Every fish-dish we received was outstanding with really interesting tastes and ingredients. But the meat we received (pork) wasn’t well cooked. The cuisine was just off and the meat was still raw. That works for fish, but not for pork. The non-alcoholic pairing was rather disappointing. You can do a lot more with this, being a restaurant with this reputation and standing. If you’re a sommelier who can taste the wood of the barrel in a wine, than sure you can find better tastes to accompany fish than Oolong-tea or algae-infusion.The service at the restaurant was great, but what we found disturbing is that they propose the tip you should give. We like to decide that ourselves. But later we found out that this is quite customary in Portugal. In all it was a great experience. 10 of the 12 dishes were marvelous, the other two were great.
